Red quinoa is delicious when served either hot or cold and is extremely versatile, as it may be used to substitute almost any other grain. Red quinoa has a delicate nutty flavor and a unique texture. Quinoa (pronounced "keen-wa") originated in South America, where it has been an important food for 6,000 years.  It is native to the Andes Mountains of Bolivia, Chile, and Peru Quinoa is a small seed that in size, shape, and color looks like a cross between sesame seed and  millet.  Most commonly considered a grain, quinoa is actually a relative of leafy green vegetables like spinach and swiss chard,  a species of goosefoot plant. (Chenopodium) The ancient Incas called it “the mother grain” and revered it as sacred. Quinoa is an annual herb that grows from three to six feet high, and like millet its seeds are in large clusters at the end of the stalk.
